What keeps you inspired when developing new dishes?

Our heritage (Greek / Italian) fresh great ingredients, whole foods (not processed) explosions of flavour and of course comfort.

Why did you choose a career in the food and hospitality industry?

It chose me! LOL My first job was at McDonalds. I loved the customer interactions, the busy frantic rushes and the organization it takes to execute a great shift. Of course my palette has developed from the days of Big Mac’s but the basics are the same.

Where did you learn your culinary skills?

In my mother’s kitchen.

What’s your favourite season to create dishes for?

Each season has its nuances but my favourite is the fall.

What’s your go-to 15 minute meal at home?

Pasta al olio

What’s your favourite thing about owning a restaurant?

Not only watching my guests enjoy themselves but just as important …

1. Having the opportunity to work alongside so many amazing people that have been part of our team.

2. The ability to give back to the very community that supports us through various charities.

What does food mean to you?

Everything...it means passion, and life and comfort and warmth. It reminds us of everything that is right in the world. It is an experience to be savoured. It is a treasure hunt…a gift.

What menu item are you most proud to serve?

Anything that my family taught me to make…authentic to our heritage.

What was your first position in a restaurant?

Dishwasher!
