Why did you choose a career in the food and hospitality industry?

I started working in the restaurant business when I was 13 and never looked back. I’m not sure if I chose this industry or it chose me. I love everything about it, creating & serving old & new delicious dishes, socializing with guests & staff, the day to day challenges. But most important with hard work and effort in this industry, you can achieve anything.

What menu item are you most proud to serve?

We are most proud to serve our ribs because the way we prepare and cook them is the way we do all of our items on our menu, right from scratch. Our side ribs are rubbed with our secret blend of seasonings, braised for hours then grilled with our house made rib sauce and served with house made baked beans, coleslaw and cornbread.

What’s your favorite thing about owning a restaurant?

My favorite thing is the amount of different people you get the chance to work with on a daily basis. From the staff and management to all the different customers we interact with everyday it really makes you feel proud to be locally owned and to be part of such a diverse community.

What’s your go-to 15 minute meal at home?

When I’m strapped for time my ‘go to’ is a homemade Margherita pizza. I’ll take a pre made pizza crust and smother it with strained tomatoes, salt, and pepper. Sprinkle some mozzarella cheese and some chopped basil (I keep some in the freezer) then fire it in the oven for 7 minutes. Quick and painless.
